Cannoli Stuffed Strawberries Recipe
Cannoli Filled Strawberries is the perfect alternative to the not-so-sexy chocolate covered strawberry teeth you might encounter on Valentine’s day! :)
Ever since traveling to Italy to photograph a wedding, I have been obsessed with cannolis. Maybe it is because we had a minor – okay, major ordeal of loosing and/or a magician pick-pocketing our wallet. So we did not have ANY money for anything extra so I never ate a cannoli in Italy. Sounds crazy – but that was kind of a bucket-list type thing for me! I will go back one day with my hubby and enjoy as many cannolis that I can handle as I bask in the warm italian sunlight on the veranda! Excuse me while I start wanderlusting and plan a trip to Florence…. :]
Since my Italy trip, I have tried hard to find the perfect cannoli recipe. During this process, I started thinking about other ways to use the cannoli filling and stuffed strawberries came to mind. I am SO glad I decided to give this a try because it turned out amazing! And the best part about it – it is SO easy! This recipe is perfect for Valentine’s Day so be sure to give it a try!
Cannoli Filled Strawberries
Ingredients:
4 tablespoons of mascapone cheese
15 oz of ricotta cheese
2/3 cup confectioners sugar
mini semi-sweet chocolate chips as desired (aka pile them on!! :])
Directions:
Mix all ingredients together in a medium bowl. Rinse and cut the top of the strawberry off as usual. Get a plastic ziploc sandwich bag and fill it with the cannoli mixture. cut a small opening in the corner of the bag and pipe the cannoli filling in to the strawberry. Sprinkle some more chocolate chips on top and serve. Best if chilled.
