Almond Joy Pie Recipe

I am on a mission! Our annual Thanksgiving pie contest is creeping up and I am trying out some recipes to beat out the competition this year (or possibly just make it to the finals this year)! :] I found out that two of the judges seem to like coconut so I am trying to find a recipe that will incorporate coconut, but not be overwhelmingly coconut tasting. I found this Almond Joy pie recipe on Pinterest, but changed it up quite a bit. I was intrigued with this recipe because it was SO easy. There weren’t any confusing or daunting steps – it was plain and simple throw everything in a bowl – mix it up, and then bake it! I’m all about that life. The less instructions I have to read the less of a chance I have to messing it up! :]

This recipe originally called for coconut Hershey kisses – which I deemed impossible to find. When I have an Almond Joy I am always a little disappointed there aren’t more almonds in it so I decided to go with almond Hershey kisses instead to give it some more almonds for crunch. Making it again I actually would buy a bag of almonds to put even more in the pie – but to each their own! I love almonds!

Ingredients:

  • 1 pie crust (I used a premade graham cracker crust)
  • 8 miniature Almond Joy bars, roughly chopped
  • 1 cup sliced almonds
  • About 18 Hershey’s Almond Kisses, unwrapped (obviously) :]
  • ⅓ cup shredded unsweetened coconut
  • 8-10 coconut tea cookies (roughly break/chop cookies in to pieces)
  • 1 can sweetened condensed milk
  • 1 square semi-sweet baking chocolate (1/3 chopped and the rest for melted topping drizzle)
Instructions:
  1. Preheat oven to 350 degrees.
  2. Mix in a medium bowl: chopped candy bars, sliced almonds, Hershey kisses, unsweetened coconut, coconut cookies and about 1/3 of the chopped baking chocolate.
  3. Once mixed pour in to pie shell. Pour the can of sweetened condensed milk on top of the pie evenly covering all of the pieces.
  4. Bake for approx. 25-28 minutes or until center is set. Cool completely.
  5. Once cooled, melt the rest of the square of baking chocolate. Drizzle onto the cooled pie.
  6. Devour it!

Overall everyone enjoyed the pie. It was pretty rich though – I drank an entire water bottle with my one piece. But it was really great! We stuck it in the fridge are eating it chilled, it is pretty good!

On to my next pie! I’m thinking something along the German Chocolate cake lines? :] YUM!
